Asparagus with Red Onion and Bacon
serves 4

Ingredients

Instructions

  1. Coat the asparagus with olive oil, then roast.
  2. Cook the bacon, then remove from the pan and reserve 1 T fat in the pan.
  3. Sauté the onion in the reserved bacon fat until the onions begin to soften, then add the vinegar and syrup and simmer until the liquids reduce and cling to the onions.
  4. Plate the asparagus, garnish with the onions and bacon, and serve.
